Works For Me Wednesday: Oat flour

Oat flour works for me.

I'm trying to wean myself off of wheat, rice, and corn so that people who don't have other options can have my share. That means looking for alternatives. Turns out that my alternatives are less expensive too!

In place of rice (brown rice), for example, I've been using barley. Works great and costs less.

But the one I've liked best is switching to oat flour from whole wheat flour. In large quantities, it's cheaper than wheat, but it's how it cooks that I really like. It's smoother than whole wheat flour. It produces a less crumbly product and has a better flavor, too. I use the same quantity as I would for wheat flour in my baking recipes.
